WHITE BEAN PUMPKIN SOUP

Cook time: 50 minutes

Yield: 8 servings

Ingredients

1/2 pound dried white cannellini beans or 3 cups cooked canned beans

1 tablespoon olive oil

1 onion, finely chopped

2 15-ounce cans of organic pumpkin puree

3 cups low-sodium organic vegetable stock

1/2 teaspoon freshly ground pepper

2 garlic cloves, minced

1/2 teaspoon ground ginger

1 cup 1% cashew milk

Directions

  1. Cover the beans with water (at least 1 inch) and leave them in refrigerator overnight. Drain beans and put in food processor until they are pureed. Optional - use canned beans and rinse well before pureeing.

  2. In a large saucepan sauté onions in olive oil until they are translucent. Add pumpkin puree, white bean puree, vegetable stock, pepper, garlic and ginger and put heat on medium. Simmer for 5–10 minutes. Add milk and heat for an additional 5 minutes. Enjoy!
